MoFo 7: Forbidden Ramen and Black Bean Croquettes

     Quite simply, I thought this meal would look fabulous in black and white, as well as in color.  These ingredients jumped to my mind when I saw this prompt so I ran with it.

This is a quick blog post, as it’s mainly about the picture!
The recipe follows if you’d like to make some at home.  The croquettes are a winner, I must say!  If you don’t want to fry them, you can try baking them, but I cannot vouch for the results.  I would maybe oil them a tad just do they don’t burn.  The vegetable broth I’ve included is just to give the noodles a slightly soup-y texture, so it’s optional.  Enjoy!

Forbidden Ramen and Black Bean Croquettes

Free from: gluten*, nuts, soy
Yield: Approx. 3-4 servings

  • 1 – 15 oz can of black beans, drained except for a small amount of liquid
  • 1/2  cup bread crumbs + enough to coat the croquettes * Use gluten-free if needed
  • 1/4 tsp chili powder
  • pinch smoked salt (or smoked paprika)
  • pinch chili flakes, opt.
  • oil, for frying
  • 1 cup sliced mushrooms (I used white buttons)
  • black pepper, to taste
  • 4 servings of forbidden rice noodles
  • water for boiling
  • 1 cup hot vegetable broth
  • gomashio, for garnish (sesame salt)


  1. In a large lidded skillet, heat some oil on medium heat.
  2. Add your sliced mushrooms and some black pepper to taste, but no salt!
  3. Brown the mushrooms for about 6-7 minutes, stirring occasionally.
  4. Once the mushrooms are browned, set them aside in a bowl.
  5. In a large mixing bowl, pour the semi-drained beans, 1/2 cup bread crumbs, chili powder, salt, and chili flakes in together.
  6. Mash and fold the croquette ingredients with a fork until the beans hold their shape,
  7. Pour some breadcrumbs on a plate (i used about 1/3 cup) and coat silver dollar sized patties of the bean mixture with them.
  8. In the mushroom skillet, head about 1/3 cup oil on medium heat.
  9. Once the oil is hot, fry the croquettes ( do not crowd them ) for about 1-2 minutes per side, or until golden and crispy.  Add more oil as needed.
  10. Set the fried croquettes aside onto a separate plate.
  11. In a saucepan, heat enough water to boil desired portion of noodles.
  12. Bring the water to a rapid bowl (especially if you are using the same brand as I did) and add the noodles.
  13. Carefully time the noodles for 3 minutes sharp, then remove them from the heat immediately.  Stir them to break them apart and drain the water.
  14. In each bowl, Pour enough broth to cover the noodles, or use none if you wish.  This is simply to provide a soup-like texture.
  15. Layer some mushrooms and about 2 croquettes per person on top the noodles.
  16. Garnish with gomashio as you would like.
