I’ve got an easy recipe for today that is a feast for the eyes and stomach – pink pitaya (dragonfruit) nice cream!
The ingredients are a bit specialized, so if you can’t find pitaya or frozen pitaya puree at your local store, you can search online or sub whatever frozen fruit you would like that is pink (strawberries?). I love to whip up nice cream smoothies in the summer for breakfast. They’re fast, easy and always delicious. Packed with fiber, they can carry you all through the morning during work or whatever you have to do until lunch. I use protein powder to increase the nutrients, protein content and taste profile for nice cream, although it doesn’t necessarily need it. I’m a big fan of Sunwarrior proteins. I used the Classic Plus chocolate flavor in this recipe, but I’m also a big fan of vanilla and I think it would work nicely here too.
The base barely requires measuring. I used:
- 1.5 frozen bananas
- 1 packet pitaya puree
- 3/4 scoop Sunwarrior protein powder
- 1/3 cup non-dairy milk ( I used Good Karma flax)
I threw it all in my Vitamix and let it go on low until it ballooned into a fluffy soft-serve consistency. The result is perfect for eating out of a bowl or cup – I chose a mug with kitties because it’s Caturday. 🙂
For toppings, I sprinkled some chia seeds on there and planted some frozen strawbs on the side. They’re a nice treat towards the end of the smoothie and they keep everything from melting too fast.
